wet ingredients

3 very ripe medium sized bananas (use a fourth cut in half for decor on top)
1 cup of sugar
1/2 cup melted butter
2 eggs - you can use them right of the fridge if you are lazy like me.
1 tsp vanilla (or more if you are like me. I use vanilla bean paste)
1 tablespoon milk

dry ingredients 

2 cups sifted flour
1 tsp baking soda
1/2 tsp baking power
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp (or a dash) of nutmeg

sometimes I add nuts (covered in flour)

Ready, Set, Bake!


Pre-heat your oven to 350F

Mash the 3 bananas very well in a large/med bowl. Add the 1 cup of sugar and mix well. Add 1/2 cup melted butter & let cool. Then add the two eggs, and vanilla just until combined. Then if you are fancy you can combine all the dry ingredients together in a separate bowl.

Or (if you are lazy like me). Put your two sifted cups of flour on top of the wet mixture and then scoop your baking soda, baking powder, salt, cinnamon and nutmeg on top of the flour. I like to put it all in a
pile and then kind of swirl it in a thin pancake layer on top of the wet mixture before fully mixing everything together just until fully combined.

If you are adding nuts, you can now add them last. Be sure to toss them in a little bit of flour so they don't sink to the bottom.

Pam or grease the pan and then pour your batter in.

If you have an extra banana, cut it lengthwise and put it on top to decor and a tasty roasted banana.

Bake for 1 hr on 350F, middle track in a quick loaf pan.
